Diana's Scones

It only takes 15 minutes to produce a basketful of lovely hot scones, featherlight on the table.

With your favourite jam (ours is always strawberry) and freshly whipped cream there;s bound to be an appreciative response.

Makes about 12

YOU WILL NEED
2 cups self-raising flour
½ tsp salt
1 tsp sugar
30g butter, softened
½ cup of milk
¼ cup of water

(I double the recipe and wing it with ingredients, to be honest)

Pre-heat oven to 2000C.
Sift flour and salt into bowl, stir in sugar.
Rub in butter with fingertips until mixture resembles fine breadcrumbs.
(For a sweet scone, increase sugar to 1 tblsn, add ½ to ¾ cup sultanas)

Make a hole in centre of flour, pour in combined milk and water.
Mix lightly and quickly.
Turn out onto a floured surface, knead lightly.

Pat dough out to approximately 2cm thick.
Cut into rounds with a 5cm cookie cutter, dipping cutter into flour each time before cutting.
Roll into the shape of scone you want.
Place on suitable greased and floured baking tray.
Brush with milk.
Bake for about 10 minutes in a very hot oven or until they are golden brown on top.

The Story Behind the Recipe

In early 1989 when the nearly three year old Living Doll discovered flour play in the kitchen when helping me make play doh, we started making scones every second day until about a 6 months later I mentioned that I was sick of making them so could we please make some biscuits instead.

"Mummy, you know how to make biscuits?" asked the then 5 year old Crown Prince, in wide-eyed wonder.

The kids routinely made biscuits for afternoon tea every Monday afternoon until the last child left home in 2004 but we had scones or banana loaf most Sunday afternoons.

Even now, the Princess Royale will call on a Wednesday or Sunday afternoon and say that she is picking up fresh cream from the local shop and The Living Doll from her apartment and that the two young women are on their way over to my house by car while their men ride their bikes over and could I please put on some scones for afternoon tea?

I'm a lucky mum!
